Parsnip & apple soup
Ingredients
- 1.5 Kg Parsnips
- 600 g Onions
- 250 g Potatoes
- 12.5 g Garlic
- 500 g Apples
- 25 ml Apple Juice
- 3 Litres Stock
- 10 g Salt
Instructions
- Heat a splash of oil in a large saucepan over a medium heat
- Sweat off the onions and garlic in the pan
- Add all the parsnips, potatoes, stock and bring to the boil then cook for 25 mintues
- De core your apples
- Add the cored apples to the pan and cook for a further 25 minutes
- Add the apple juice then blend
- Serve
