Mince pies

The classic Christmas treat – and easier to make than you think!

Ingredients
  

Sweet pastry

  • 625 g butter
  • 325 g sugar
  • 3 eggs
  • 1 kg plain flour

Mincemeat

  • 675 g mixed dried fruit
  • 225 g chopped apples
  • 225 g sugar
  • 225 g melted butter
  • 4 tsp marmalade
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 8 tbsp brandy or sherry

Instructions
 

For the pastry

  • Cream the sugar & butter together until just combined
  • Add the eggs one at a time
  • Then add sifted flour until just combined (do not over-beat!)
  • Rest in fridge for 30 mins
  • Weigh the pastry into 25g balls to fill our pie press tins (about the same size as your average mince pie tin) then cut out a star shape for the top

For the mincemeat

  • Mix all ingredients thoroughly and let infuse
  • Spoon into pastry lined tin cases & top with a pastry star / lid and bake for 20-25 mins at 200c untill golden brown
