Mince pies
The classic Christmas treat - and easier to make than you think!
Sweet pastry
- 625 g butter
- 325 g sugar
- 3 eggs
- 1 kg plain flour
Mincemeat
- 675 g mixed dried fruit
- 225 g chopped apples
- 225 g sugar
- 225 g melted butter
- 4 tsp marmalade
- 1 tsp mixed spice
- 1 tsp cinnamon
- 1 tsp nutmeg
- 8 tbsp brandy or sherry
For the pastry
Cream the sugar & butter together until just combined
Add the eggs one at a time
Then add sifted flour until just combined (do not over-beat!)
Rest in fridge for 30 mins
Weigh the pastry into 25g balls to fill our pie press tins (about the same size as your average mince pie tin) then cut out a star shape for the top
