Mince pies
Ingredients
Sweet pastry
- 625 g butter
- 325 g sugar
- 3 eggs
- 1 kg plain flour
Mincemeat
- 675 g mixed dried fruit
- 225 g chopped apples
- 225 g sugar
- 225 g melted butter
- 4 tsp marmalade
- 1 tsp mixed spice
- 1 tsp cinnamon
- 1 tsp nutmeg
- 8 tbsp brandy or sherry
Instructions
For the pastry
- Cream the sugar & butter together until just combined
- Add the eggs one at a time
- Then add sifted flour until just combined (do not over-beat!)
- Rest in fridge for 30 mins
- Weigh the pastry into 25g balls to fill our pie press tins (about the same size as your average mince pie tin) then cut out a star shape for the top
For the mincemeat
- Mix all ingredients thoroughly and let infuse
- Spoon into pastry lined tin cases & top with a pastry star / lid and bake for 20-25 mins at 200c untill golden brown
