John’s Blueberry Muffins

Enjoy a Sinclair family favourite seasonal blueberry muffins!

Ingredients
  

  • 100 g Unsalted Butter Softened
  • 140 g Golden Caster Sugar
  • 2 Large Eggs
  • 140g g Greek Style Yoghurt
  • 250 g Plain Flour
  • 1 tsp Vanilla Extract
  • 2 tspb Milk
  • 2 tsp Baking Powder
  • 1 tsp Bicarbonate of Soda
  • 125 g Craigie's Blueberries

Instructions
 

  • Heat oven to 200c | 180 fan | gas 6 & line a muffin tin with paper cases.
  • Mix the butter & sugar together until pale & fluffy. Ad eggs & beat for 1 minute before mixing in the yoghurt, vanilla & milk.
  • Combine the flour, baking powder, bicarb & a sprinkle of salt in a bowl then add to the wet ingredients & stir in.
  • Finally, fold in the blueberries and spread the mixture between the cases.
