John’s Blueberry Muffins
Ingredients
- 100 g Unsalted Butter Softened
- 140 g Golden Caster Sugar
- 2 Large Eggs
- 140g g Greek Style Yoghurt
- 250 g Plain Flour
- 1 tsp Vanilla Extract
- 2 tspb Milk
- 2 tsp Baking Powder
- 1 tsp Bicarbonate of Soda
- 125 g Craigie's Blueberries
Instructions
- Heat oven to 200c | 180 fan | gas 6 & line a muffin tin with paper cases.
- Mix the butter & sugar together until pale & fluffy. Ad eggs & beat for 1 minute before mixing in the yoghurt, vanilla & milk.
- Combine the flour, baking powder, bicarb & a sprinkle of salt in a bowl then add to the wet ingredients & stir in.
- Finally, fold in the blueberries and spread the mixture between the cases.
