Euan’s Gingerbread Biscuits
Ingredients
- 375 g Plain Flour
- 1 tsp Bicarbonate of soda
- 3 tsps Ground Ginger
- 120 g Unsalted Butter (cold & cubed)
- 175 g Light Brown Sugar
- 5 tbsps Golden Syrup
- 1 Medium Egg
Instructions
- Mix the flour, bicarbonate soda & ginger in to a large bowl & add the cold butter.
- Rub the mix together until it resembles breadcrumbs (can also be done in a food processor).
- Mix the sugar into the mix & combine.
- Then add the golden syrup & egg – beat with your hands until it is a smooth dough.
- Pre-heat oven to 180c | 350F | Gas Mark 4.
- Knead the biscuit dough & roll on to a lightly floured surface.
- Roll our to 1/2cm thickness & cut into your desired Christmas shapes.
- Place them on baking tray(s) lined with parchment paper & bake for 10 – 11 minutes.
- Cool on a wire rack & decorate as desired.
