We often get asked about the difference between topside and silverside.

As a general rule, silverside is leaner than topside so if you like your meat cooked anything from medium rare onwards then topside is the joint for you.

Deliciously tender yet still quite lean, the marbling of fat makes for a tasty roast.
NB – It is also fantastic once cold for sandwiches and salads.
