Boil the kettle and preheat the oven to 180°. Make sure you have one rack placed in the middle and another rack at the lowest position in your oven.
Place a baking tray on the lowest rack and fill it half way with the boiling water from the kettle. The steam will help the egg bites to cook gently.
Use a generous amount of butter to grease the muffin baking tray to avoid the egg bites from getting stuck.
Cook the bacon in an air fryer for 15 minutes. (Either on the bacon setting or at 180°) (see notes)
Once cooked, place the bacon onto a plate lined with paper towels and dice the bacon once cooled down.
Then place the eggs, cottage cheese, cornstarch, salt, pepper & half of the cheddar cheese into a blender for roughly 30 seconds.
Once combined, pour the mixture evenly from the blender into the prepared muffin tins. Fill each tin three quarters full.
Sprinkle the bacon and the remaining cheddar cheese evenly in each tin. You can also use a spoon to push some of the bacon in so it's not sitting on top.
Place the tins into the oven on the middle rack and cook for 20 – 25 minutes. (until the eggs set)
Allow the egg bites to cool down & settle for 5 minutes. Use a spoon to carefully remove the bites from the tray, place them onto a plate & enjoy!
