Anne's Raspberry & White Chocolate Muffins
Treat yourself after a day in the fields with Grannie’s raspberry and white chocolate muffins – bursting with farm-fresh berries and homemade goodness.

- 250 g Plain Flour
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 115 g Unsalted Butter Melted & Cooled
- 150 g Sugar
- 2 Large Eggs
- 1 tsp Vanilla Extract
- 120 ml Whole Milk
- 125 g Craigies Raspberries
- 115 g White Chocolate Chips or Chopped White Chocolate
- 120 g Sour Cream or Greek Yogurt To add moisture
Preheat oven to 190c. Line a 12 cup muffin tin with paper liners
In a large bowl whisk flour, baking powder, baking soda and salt.
In another bowl combine melted butter and sugar.
Beat in eggs one at a time then add vanilla, milk and sour cream or yoghurt. Mix until smooth.
Pour the wet mixture into the dry ingredients and stir gently until combined (don't overmix)
Fold in raspberries and white chocolate.
Fill muffin cups until ¾ full. Bake for 18-22 minutes or until a toothpick comes out clean.
