Parsnip & apple soup

Comfort food at its best, this is sure to be a winner. An easy lunch or dinner to prepare on a cold winter’s day. 


  • 1.5 Kg Parsnips
  • 600 g Onions
  • 250 g Potatoes
  • 12.5 g Garlic
  • 500 g Apples
  • 25 ml Apple Juice
  • 3 Litres Stock
  • 10 g Salt


  • Heat a splash of oil in a large saucepan over a medium heat
  • Sweat off the onions and garlic in the pan
  • Add all the parsnips, potatoes, stock and bring to the boil then cook for 25 mintues
  • De core your apples
  • Add the cored apples to the pan and cook for a further 25 minutes
  • Add the apple juice then blend
  • Serve
