Winter Lentil Soup


Ingredients

  • 1 cup dried lentils
  • 1 tin plum tomatoes
  • 500ml vegetable stock
  • 3 carrots chopped
  • 1 onion chopped
  • 1 parsnip chopped
  • rapeseed oil
  • salt and pepper to taste

Method

  1. Heat the rapeseed oil in a large saucepan, then gently cook the onions for 5 mins until softened but not coloured
  2. Add the rest of the vegetables, lentils and stock
  3. Bring to the boil, cover and simmer for around half an hour
  4. Cool a little then blitz to the desired consistency
  5. Season to taste
