These pickled carrots are so quick and easy to make and are delicious with a cheese board, adding crunch to a sandwich or salad, or as part of a sharing board! A fantastic way of preserving the humble carrot. And a jar makes a great homemade present too for anyone who loves food!

1. Preheat oven to 100oC/gas mark ½ . Sterilise 2 jars and their lids by washing in hot soapy water, rinsing, and placing in the warm oven for 15 minutes. Then remove from the oven and leave to cool.
2. Wash and peel the carrot(s). Very thinly slice the carrots using a mandolin, a slicing blade on a food processor or by hand, or alternatively coarsely grate them using a grater. Layer up the carrot slices in the sterilised jars, or alternatively pack them with the grated carrots.
3. Add the white wine vinegar, water, granulated sugar, fennel seeds, mustard seeds, bay leaf, honey and salt to a pan. Heat gently until sugar and salt has dissolved and continue heating until mixture starts to boil, at which point turn heat down and simmer for a further 2 minutes. Leave to cool to room temperature.
4. When vinegar mixture has cooled, pour over the carrots, place lids on tightly, and store in the refrigerator for a minimum of 24 hours before opening. They should last round about 3 weeks in the fridge.
