Litty’s Larder’s Homemade Granola

I love making granola, it’s a relatively easy thing to make and so nutritious too! The good thing about this recipe is once you have the base mix of 4 ingredients;  a grain, a sweetener, an oil , and a fruit/nut/seed,  you can build your own. Here I have put together one of my favourite combinations. I have added some fennel seeds in here but you can leave them out if you prefer. Top  with yogurt, milk, fruit or whatever takes your fancy for breakfast, or sprinkle on top of a smoothie bowl! The recipe is vegan too!

Ingredients

  • 250g Rolled Oats
  • 250g Buckwheat groats
  • 50g Pumpkin Seeds
  • 25g Flax (Linseeds)
  • 100g Pecans
  • 1 tsp Fennel Seeds
  • 100g Dried Cranberries
  • 100ml Maple Syrup
  • 100g Coconut oil

Method

  1. Preheat the oven to 150oC conventional/130 oC fan/gas mark 2.
    2. Add the rolled oats, buckwheat groats, pumpkin seeds, flax seeds, pecans and fennel seeds in large bowl and mix. If you can’t find buckwheat groats just add another 250g rolled oats to the mix.
    3. Add the coconut oil and maple syrup to a small pan and heat until coconut oil has melted, stir to combine.
    4. Then pour the melted mixture over the dry ingredients and stir until all the dry ingredients have been coated with the syrup/oil mixture.
    5. Spread the mixture out on a large baking tray and bake in the middle of the oven for 25-30 minutes, stirring half way through, until the mix turns a lovely golden colour.
  2. Leave to cool and stir through the dried cranberries.
  3. Store in an airtight container and keep for up to one month.
