1. Trim and chop leek. Peel and dice potatoes and onion.
2. Take a strong pan with a lid and heat the oil over a medium heat. Add the onion and saute. until just turning golden at the edges. Do not over brown.
3. Add leeks and potatoes to the pan and saut. together stirring lightly to coat all the vegetables with oil. Adjust heat so that there is a quiet sizzle and put lid on pan. Cook for approximately 20 minutes until potatoes are soft.
4. Add stock and cook for a further 20 minutes.
Serve as is or liquidise to create a puree.
