You will need a bottle with a big enough opening for the fruit to go in.
1. Plop the damsons into the bottle so that 2/3 is full.
2. Fill to the top of the bottle with granulated sugar.
3. Pour in the Gin.
5. Give a good shake and place in a dark cupboard /wine rack.
6. Turn and shake the bottle until the sugar has dissolved, you can do this every couple of days.
Leave for at least 3 months – Should be done for Christmas!
Once the spirit has been decanted, you can use the damsons as a pudding – lovely with cream or mascarpone.
