Apple and Almond Tray bake


Ingredients

  • 900g Cooking Apples
  • 1 Juice of Lemon
  • 450g Butter
  • 8 Eggs
  • 700g Caster Sugar
  • 700g Self-Rising Flour
  • 4 teaspoonsBaking Powder
  • 2 teaspoons Almond Essence
  • Generous Scatter Flaked Almonds

Method

  1. Peel, core and thinly slice apples and squeeze over lemon juice.
  2. Beat the melted butter, sugar, egg and almond essence in the Hobart.
  3. Spread just less than half the mixture into the tin.
  4. Arrange the apples over the top of the cake mixture.
  5. Carefully spread the rest of the cake mixture over the apples.
  6. Scatter with flaked almonds
  7. Bake at 140°c for approx. 50-60 minutes until golden and firm to touch.
  8. Leave to cool slightly then sprinkle over the caster sugar.
