Meet our supplier of the month - Great Glen Charcuterie.

One thing we take real pride in at Craigie's is ensuring that we work with small producers and suppliers who are largely based in Scotland and who have a similar ethos to us. This month, we speak to Anja Baak of Great Glen Charcuterie.

Great Glen Charcuterie is a family business set up ten years ago by Anja and her husband Jan Jacob. They live and work in the beautiful little village of Roy Bridge, set deep in the rugged Scottish Highlands. They originally hail from The Netherlands.
All of their products are produced by hand and air dried because Jan is passionate about preserving as much of the unique and unrivalled flavour of wild venison as he possibly can. New ideas drive them forward and they are always striving to create fresh and innovative recipes and flavours.
How does working with Craigie's help your company?

"We have been selling our charcuterie at Craigie's for a long time, they have supported our company from the beginning."
What challenges do you face running your business?
"We are a small team producing and selling our charcuterie. The process takes a long time, some products take months to produce so always a challenge to make sure we have enough stock as demand has been growing over the years. We have been winning many awards including great taste awards which shows the quality of the products."

If you were at point of sale in Craigie's what would you say to potential customers?
"Our charcuterie is made with locally sourced wild venison, this is a very sustainable meat, we do not add pork to most of our products which makes them really lean and a very unique taste. Great for entertaining on platters or to use in cooking."

Are you able to sum up the taste of your salami in a few words?!

"Delicious, lean, unique, easy entertaining and always a talking point."

Thanks to Anja for spending the time speaking to us this month. Below you'll find a recipe using one of the Great Glen Charcuterie salamis plus we have 20% off their products in the shop during June too!
